  • 6 chicken legs


  • Marinade:
  • 6 spring onions
  • 2 cloves garlic
  • 3 scotch bonnet peppers
  • 2 tsp all spice
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tbsp fresh thyme
  • 1 tbsp honey
  • 1 ½ tsp salt
  • 1 tsp fresh black pepper
  • ¼ cup vinegar
  • 1 tbsp oil


  1. Put all ingredients into a blender and blend until smooth
  2. Poke chicken legs with a knife, this helps the marinade sink deeper in
  3. I save 1 tbsp of the marinade to make my BBQ sauce
  4. Spread marinade all over chicken and leave to marinade in the fridge over night
  5. Cook on a BBQ - charcoal is best, or in a hot oven for 20 -25 minutes until cooked
  6. Serve with rice n peas and my BBQ jerk sauce


You can add some honey and ginger to make a great variation.
