Chicken Teriyaki Don is probably my daughters favorite dinner it easy to make, sweet, salty soy sauce with garlic and ginger served on steamed Japanese rice.

Ingredients

  • 4 x chicken thigh fillets, skinned and boned For the Teriyaki sauce

  • 2 cloves garlic finely chopped

  • 1 inch piece ginger peeled and finely chopped

  • 1 tsp sesame oil

  • 1/2 cup light soy sauce (Or tamari GF)

  • 1 1/2 tbsp white sugar

  • 1 tbsp rice vinegar

  • Pinch of black pepper

Instructions

  1. Start by making your sauce

  2. Add all ingredients to a sauce pan and heat gently until the sugar has melted

  3. Take off the heat and leave to cool

  4. Pour half the sauce onto the chicken and leave to marinade for 30 minutes, or up to 2 hours ahead

  5. Cook the chicken either in large pan or griddle with a little oil for a few minutes each side until cooked all the way through

  6. Slice and serve with an extra drizzle of the sauce you saved.

  7. Serve with cooked rice and a sprinkle of spring onions and sesame seeds
