Blueberry Brioche French Toast

A delicious and easy brunch to make or breakfast, I like to use brioche when making French toast as it's soft and sweet.

Ingredients

  • French Toast

  • 4 x thick slices of brioche

  • 2 eggs

  • 1/3 cup milk

  • ½ tsp cinnamon

  • 1 tbsp caster sugar

  • Few blobs of butter to cook with

 

  • Blueberry Compote

  • 200g blueberries

  • 1 tbsp sugar

  • 1 tbsp water

 

  • To Serve

  • Greek yoghurt

  • Agave syrup / maple syrup / honey

Instructions

  1. Start by making the blueberry compote

  2. Really easy, add the blueberries, water and sugar to a small pan

  3. Heat on a medium heat for 2 – 3 minutes until the blueberries have exploded a bit and they begin to turn a bit mushy

  4. Take off the heat and leave to cool

 

  1. In a large bowl whisk the eggs, milk, sugar and cinnamon together

  2. Heat a large frying pan

  3. Dunk the brioche slices into the egg mixture, soaking both sides

  4. Add a blob of butter to your heated pan

  5. Place the soaked brioche in and cook for 1 – 2 minutes each side until golden brown and all the egg is cooked through

  6. The heat needs to be medium or the brioche might burn before cooking through

  7. Serve French toast hot with dollop of Greek natural yogurt, and spoonful of your blueberries

  8. Plus a drizzle of something sweet like agave, honey or maple syrup
