How to make a simple moist banana cake.
- Ingredients 
- 3 large eggs 
- 360g / 3 cups plain flour 
- 1 ½ tsp baking soda 
- ¾ cup – 175g cup butter 
- 350g / 2 cups sugar 
- 1 cup / 240ml milk 
- 1 ½ cup mashed banana (3 ripe bananas) 
- 1 tsp vanilla extract 
- pinch of salt 
- Equipment 
- Cake tin 9 x 9 (medium size) 
- Greaseproof paper 
Instructions
- Preheat oven to 180c / 350f / gas 4 
- Beat the butter and sugar together until light and fluffy 
- Add eggs one at a time beating well before you add the next one 
- Mix the flour, bicarb and salt together then add a 1/3 of it to mixture with ½ of the milk and beat together 
- Add the rest of the milk and some more flour, beat well 
- Then add the last bit of flour, beat in, and lastly add the mashed banana 
- Beat together into the batter 
- The batter will be lovely and fluffy by now 
- Pour it into to your greased and lined cake tin 
- Pop into your preheated oven for 50 – 60 minutes 
- It will be firm and spring back when you press it gently with your finger, then you’ll know it’s cooked, or poke a thin skewer in and if it comes out clean it is cooked
