How to make a simple moist banana cake.

  • Ingredients
  • 3 large eggs
  • 360g / 3 cups plain flour
  • 1 ½ tsp baking soda
  • ¾ cup – 175g cup butter
  • 350g / 2 cups sugar
  • 1 cup / 240ml milk
  • 1 ½ cup mashed banana (3 ripe bananas)
  • 1 tsp vanilla extract
  • pinch of salt

 

  • Equipment
  • Cake tin 9 x 9 (medium size)
  • Greaseproof paper

Instructions

  1. Preheat oven to 180c / 350f / gas 4
  2. Beat the butter and sugar together until light and fluffy
  3. Add eggs one at a time beating well before you add the next one
  4. Mix the flour, bicarb and salt together then add a 1/3 of it to mixture with ½ of the milk and beat together
  5. Add the rest of the milk and some more flour, beat well
  6. Then add the last bit of flour, beat in, and lastly add the mashed banana
  7. Beat together into the batter
  8. The batter will be lovely and fluffy by now
  9. Pour it into to your greased and lined cake tin
  10. Pop into your preheated oven for 50 – 60 minutes
  11. It will be firm and spring back when you press it gently with your finger, then you’ll know it’s cooked, or poke a thin skewer in and if it comes out clean it is cooked
