Acai Bowls

This superfood Acai bowl is packed full of nutrients, vitamins and minerals to keep you strong and healthy throughout the year, plus the ingredients are amazing for your skin, hair and nails.  I added chia seeds, cashew butter and coconut to add as much goodness into this Acai bowl as possible.

Ingredients:

Serves 1 big bowl

  • Β½ cup acai pulp frozen / or 2 tbsp powder
  • 1 cup frozen blueberries
  • 1 cup frozen strawberries
  • 1 small banana
  • 1 tbsp cashew nut butter
  • 1 tsp chia seeds soaked in 2 tbsp water
  • Β½ cup soy milk or milk of your choice

  • Toppings:
  • kiwi
  • fresh blueberries
  • granola
  • raspberries
  • shredded toasted coconut

Method:

  1. Start by soaking the chia seeds in a small bowl with the water for 5 minutes
  2. Then add the rest of the ingredients for the Acai bowl, and the soaked chia seed mixture (not the toppings) to a blender and blend until smooth
  3. Pour into a bowl and decorate with all your fresh fruit and toppings
