Spiced Seared Tuna Gazpacho

Try this amazingly refreshing dish on a hot summer’s day to tantalise your taste buds. Gazpacho is a chilled soup and the spiced tuna accompanies it perfectly. This is Tiffany’s recipe from Top Chef season 7 Episode 6.


  • Tuna:
  • 1 lb fresh tuna
  • 2 Tbsp fennel seeds
  • 2 Tbsp coriander seeds
  • 2 Tbsp black peppercorns
  • 2 Tbsp oil
  • Salt, to taste


  • Gazpacho:
  • 1 qt tomato juice
  • 2 cups assorted tomatoes, small diced
  • ½ cup cucumber, small diced
  • 1 jalapeno, minced
  • ½ tsp finely chopped garlic
  • 1 yellow bell pepper, small diced
  • 1 lime, juiced
  • ¼ cup red wine vinegar
  • 1 tbsp fresh basil,
  • 1 tbsp fresh mint,
  • 1 cup olive oil
  • Salt and pepper, to taste


  • Crème fraiche or sour cream to serve.


  1. For the Tuna:
  2. Toast seeds and peppercorns in a dry skillet and blend in spice grinder
  3. Sprinkle salt and ground spices on tuna
  4. Drizzle with oil and sear tuna on all sides on a hot skillet
  5. Set aside and let cool


  1. For the Gazpacho:
  2. Mix ingredients together in a bowl and keep refrigerated
  3. Slice tuna and place in serving bowls
  4. Pour gazpacho around
