Special Fried Rice

This is a perfect dish to make when you have leftover rice.  We eat rice a lot in my house so I make this often and just use up whatever vegetables or meats I have.

Ingredients

  • 5 raw large prawns chopped

  • 1 cup cooked chicken breast chopped

  • 2 eggs

  • 3 – 4 cloves garlic finely chopped

  • 3 spring onions chopped

  • 2 cups long grain white rice cooked and cold 

  • 2 tsp sesame oil

  • 1 tbsp sunflower / ground nut oil

  • ½ cup frozen peas

  • 2 tbsp soy sauce

  • 1 tbsp oyster sauce

  • ½ tsp ground white pepper

Method:

Start by making sure all your ingredients are chopped, cleaned and ready to cook.  Heat the 2 oils in a large wok, add the raw prawns and garlic and cook for a minute or until the prawns have turned pink all over.  Then you can add the chopped chicken, half of the spring onions, peas and rice.  Stir fry everything together for a minute.  Push the rice to one side of the wok and pour half of your egg in and leave it to cook as if you're making an omelette, once it's nearly cooked push that to one side and pour in the remaining egg.  Cook it the same way and once it's nearly cooked you can stir it into the rice and chop it up with your spatchula.  Add the soy sauce and oyster sauce and white pepper.  Stir fry everything together for another minute or so.  

 

Serve piping hot, with a sprinkle of spring onions on top, and remember you can use up all your left overs in this easy and budget friendly meal.
