Spaghetti Alla Carbonara

Learn how to make the Italian Classic Carbonara for an easy and quick meal. This is the real Italian Carbonara – no added cream!

Ingredients

  • 200g Spaghetti
  • 100g pancetta / guanicale / or bacon lardons
  • Olive oil
  • Black ground pepper
  • 2 large eggs
  • 3 tbsp Pecorino Romano
  • 1 1/2 tbsp Parmesan

Instructions

  1. Heat a large pan full of water to cook the spaghetti
  2. Add a pinch of salt and when the water is boiling add the spaghetti and cook for 10 minutes
  3. Or until cooked al dente
  4. While the pasta is cooking, heat a little olive oil in a frying pan
  5. Cook the pancetta on a low heat until crispy, about 4- 5 minutes
  6. In a large bowl whisk the eggs, 2 tbsp of the Pecorino and 1 tbsp of Parmesan with a big pinch of ground black pepper
  7. Drain the spaghetti saving some of the water
  8. Put straight into the bowl with the eggs and slowly mix together
  9. The eggs will cook with the heat of the pasta and will make a sauce
  10. Add the remaining pecorino and parmesan, the pancetta, and a little of the hot water from the pasta to make a bit more sauce
  11. Serve straight away!
