Shrimp and Egg Fried Rice

I kept this one simple and used just shrimps and eggs. You can add whatever ingredients you like and it’s always best made with leftover cold rice, this stops the rice from getting too soggy.

Ingredients

Serves 2

  • 3 cups of cold cooked rice

  • 3 large cloves of garlic crushed

  • 1-2 cups of chopped and cleaned raw shrimp

  • 1 tsp fish sauce

  • 1 tbsp oyster sauce

  • 3 spring onions finely chopped

  • 2 eggs

  • 2 -3 tbsp vegetable oil (or canola, sunflower, peanut oil)

To serve - Crunchy garlic chili oil and fresh sliced green onions

Method:

Firstly get all your ingredients chopped and ready to cook.  Beat eggs in a small bowl, and make sure the cold rice is broken up with a fork.   When you start cooking you will need to be quick!

Heat oil in a wok or large frying pan. When you see it starting to smoke add the garlic and chopped shrimp and most of the chopped spring onions, save some for sprinkling at the end. Once the shrimp looks pretty much cooked through add the cold rice and stir together for a minute. 

Push rice to one side and pour the beaten eggs into the space.  Let settle and cook for a few seconds, add the fish sauce and oyster sauce, then stir it into the rice and continue to cook until eggs and rice are hot and cooked through.

Serve up with a sprinkle of fresh chopped green onions, a sprinkle of white pepper preferably, or black is fine, and some chili paste or sauce!
