Here is a great BBQ chicken recipe that a friend gave me from Malaysia. She normally loves a bit of BBQ chicken to break fast with, and I just love BBQ chicken anytime! This is a very easy marinade to make.

Ingredients

  • 4 x Chicken legs

  • Marinade:

  • 1 tbsp Sesame oil

  • 2 heaped tbsp. hot Chili sauce

  • 1 heaped tbsp. Honey

  • 2 tbsp dark Soy sauce

  • pinch salt

  • 1 tsp garlic powder

Instructions

  1. Mix all ingredients for the marinade together

  2. Stab your chicken legs with a knife to make some small slits

  3. This helps the marinade to sink deeper into the meat so it tastes better

  4. Pour marinade over and leave for 2 hours preferably, or you can do this over night

  5. Preheat oven to 180c / 350f 

  6. To cook your chicken, half cook it in the oven for 15 minutes

  7. Keep any left over marinade for basting later

  8. Then finish cooking it on a charcoal BBQ to get that amazing flavor

  9. Keep basting with the left over marinade while it is cooking to get a lovely sticky glaze at the end
