Honey and Coconut Granola

Making homemade granola is so easy and the best part is you get to decide what ingredients you want in it! It's a great healthy breakfast.

Ingredients

  • 3 cups / 270g Gluten free Oats

  • 2 – 3 tbsp sunflower oil

  • pinch salt

  • ½ cup / 50g dessicated coconut

  • 125g Rowse honey (or agave if vegan)

  • 1/2 cup / 100g blanched hazelnuts

  • 2 tbsp pumpkin seeds

  • ½ cup / 50g flaked almonds

 

  • You can add whatever nuts you like before you bake it, and once it’s cooled you can add dried fruit too

Instructions

  1. You will need - 2 x baking trays

  2. Pre heat oven to 300f / 145 c

  3. Put the oats, almonds, coconut and pinch of salt in a large mixing bowl

  4. Stir together

  5. Drizzle the honey and oil over the top and mix well so that it all starts clumping together and everything is coated.

  6. Spread mixture out evenly on a couple of greaseproof baking trays and pop into the oven for 30- 40 minutes.

  7. Give the mixture a couple of turns while it’s in the oven to make sure everything get’s evenly baked.

  8. It will be a lovely golden and crisp color when cooked

  9. Take out, make sure you stir it so it doesn’t stick to your tray after it has cooled

  10. Keep in an air tight container for 3 – 4 weeks.

Notes

To make this recipe gluten free just use gluten free oats!
