Fig, Peach, Burrata & Prosciutto Board

I made this beautiful sharing platter using all in season figs and peaches and added some salty prosciutto, truffle Marcona almonds, and a piece of creamy soft burrata cheese.  This is a perfect appetizer to any meal where everyone can grab a piece of bread and spread whatever they want from the board on top. Hope you all enjoy! 


Recipe:

Serves 4: 


Ingredients: 

8 fresh figs cut in halves 

2 fresh ripe but firm peaches cut into segments and destoned

1 portion of burrata 

A handful of rocket / arugula 

1 Oz, small knob of butter 

1 tbsp maple syrup or brown sugar 

2 tbsp balsamic vinegar 

1/4 cup chopped salted marcona almonds 


Method: 

Start by caramelizing the figs and Peaches. Heat the butter in a heavy bottomed pan, add the sliced fruit. Add the maple syrup or sugar, sprinkle over. 

Turn after a minute or too to make sure each side is a lovely golden brown caramelized color and the fruit has softened. Add the balsamic vinegar, swish pan around to de glaze and turn off heat. 

Place the arugula on a plate or board, with the burrata in the middle, add the caramelized figs and peaches around, layer some prosciutto around. Add the chopped marcona almonds on top and a drizzle of the left over balsamic sauce from the pan. 

Serve with some crusty bread or crostini’s.
