Courgette, Aubergine and Mozzarella Salad

A simple vegetable salad full of Mediterranean flavors

Ingredients

  • 2 courgettes sliced length ways

  • 1 aubergine sliced into rounds

  • 1 bag watercress

  • 2 balls mozerella

  • 2 tbsp olive oil

  • 1 clove garlic

  • salt / pepper

  • Dressing:

  • Handful of fresh basil

  • Handful of Fresh mint?

  • Juice of 1 lemon

  • 100ml olive oil

  • 1 clove garlic

  • ½ tsp salt

  • 1 tbsp roasted pine nuts (plus some extra for sprinkling on salad)

Instructions

  1. Start by cooking your vegetables

  2. Slice them up, lay on a plate, drizzle with olive oil and season with salt and pepper

  3. Cut a clove of garlic in half and rub all over the vegetables to give some extra flavor

  4. Heat a griddle pan, or frying pan and cook each side for 2 -3 minutes until cooked through

  5. If you have a BBQ going then cooking the vegetables on that would make them taste amazing!

 

  1. To make the dressing simply blitz all the ingredients together until finely ground

  2. Taste and adjust seasoning to your own liking

  3. Assemble the salad with watercress, grilled vegetables, chunks of mozzarella

  4. Sprinkle of extra spoonful of roasted pine nuts, and drizzle the dressing over

  5. Serve up and enjoy
