Corned Beef Hash

This is a great recipe to make using up leftovers. For instance, if you had some leftover boiled potatoes in the fridge this would make a great breakfast or brunch meal. Plus you can make this your own, and add other meats like chicken or sausage, brisket, pastrami literally goes well with anything you want to put in it. You can even make it vegetarian with some veggies and cheese, or make fish patties even.

Ingredients: Makes 4 large hash patties

  • ·      1 cup of chopped onion

  • ·      1 clove garlic chopped garlic (or a tsp of garlic powder)

  • ·      1 tsp seasoning salt like Lawry’s or a chipotle seasoning

  • ·      2 rashers bacon chopped

  • ·      1 cup of corned beef chopped

  • ·     2 large potatoes, peeled, cooked and chopped

  • 1 cup of baked beans, or 1 small can

  • Salt and pepper

  •       Olive oil for cooking

Method:

Start by cooking the chopped bacon and onion together in a frying pan with about 2 tbsp of olive oil.  Cook them until they start to turn golden and the bacon is going crispy, about 5 minutes.  Once golden add the garlic, corned beef  and seasoning salt.  Let cook together for another minute, stirring all the time.  Add the cooked mixture to the cooked potatoes, add the baked beans and stir in. 

Next heat some more oil 2 tbsp in a frying pan (I use the same one) you can shape the hash into round patties or cakes with your hands or just add it all into the pan.  You want to cook the hash until it has turned really brown on the bottom, the crispier the better! 

I like to serve mine with a fried egg and grilled tomatoes, baked beans and mushrooms.
