I love a good cheesecake, this recipe is super easy to whip up if you’re in a hurry. I used walkers chocolate chip gluten free shortbread biscuits for the base and they worked so well. This recipe is a great one to make for your gluten free friends and family. [br][br] I created these recipes for Walkers Shortbread in association with BritWeek. BritWeek is an event that happens every year in Los Angeles to celebrate the best of British and American business. Seeing as I’m British, love shortbread and working in America I was so happy to do this and thank you to Walkers and BritWeek for asking me to be involved. Ingredients
  • 1 pack Walkers Chocolate Chip Gluten Free shortbread biscuits
  • 25g / 2 x tbsp butter
  • 75g caster sugar
  • 400g cream cheese (room temp is best)
  • 200g melted dark chocolate (leave to cool for 5-10 minutes)
  • 2 x tbsp dark cocoa powder
  • 1 x tbsp hot water
Instructions
  1. Crush the shortbread biscuits in a food processor so they become fine crumbs
  2. Mix your crushed fine crumbs with the melted butter
  3. Push lightly into the bottom of your individual pots
  4. Place in the fridge to chill
  5. To make the filling, simply add the cream cheese, cooled melted chocolate, sugar and beat well
  6. Mix the cocoa powder with the hot water until you get a smooth paste
  7. Add this smooth paste to the cream cheese mixture
  8. Beat everything well together
  9. Spoon a couple of tablespoons into each mini pot and smooth the top with the back of the spoon
  10. Leave to chill overnight, or for 2 hours
Notes
This is a rich cheesecake so it is good to serve this with raspberries, shaved chocolate or even chopped roasted hazelnuts
